We’re only a day away from ANZAC day and I have on my agenda a range of activities to undertake, from viewing some images and video clips to attending an ANZAC day dawn service. I’ve got some printed activities all ready to go though first on the agenda this morning is to bake some yummy ANZAC cookies:) Here’s my recipe with reduced sugar if you don’t already have one to try out:
1 cup rolled oats 1/2 cup SR flour
1/2 cup plain flour 3/4 cup desiccated coconut
1/4 cup sugar 1/2 tsp bicarb of soda
2 Tblsp boiling water 125g butter melted
2 Tblsp golden syrup
Preheat oven to 165 degrees C. Mix all dry ingredients together and then melt the butter and golden syrup together. Dissolve the bicarb in boiling water and add to melted butter and golden syrup. Add this to the dry ingredients and mix well.
Place in large teaspoonfuls on greased baking tray or press the whole mixture together into a greased tray for a slice. Bake in oven for 8 – 12 min. (Fan forced oven) Do not overcook!!
Biscuits are roughly 7 – 8g Carbs each. If you like them to be sweeter just double the sugar amount.

I’m mostly focusing on the main purpose of ANZAC day, some of the key symbols and key people and places that are mostly associated with ANZAC day. We’ll look in particular at Gallipoli, it’s location, what happened there, ‘Simpson & his donkey’ and other stretcher bearers.
Our family in the past has made an effort each year to get along to a local dawn service. Matt used to participate in a march when he was in Air Force and he himself served overseas during the East Timor conflict. So, we really have an appreciation and respect for our service men and women … ‘Lest we forget’.
